Upside Down Puff Pastry Hack
INGREDIENTS:
Puff pastry sheet, thawed
Classic Greek-Style Cashew Cheese
1 tbsp olive oil
a few squeezes of balsamic glaze
salt and pepper
STEPS:
Preheat your oven to 400 C
Line a baking sheet with parchment paper
Unroll your puff pastry sheet and slice into rectangles of your preference. You can make them smaller or bigger
Drizzle a little bit of olive oil and balsamic glaze on parchment paper equally spaced apart
Sprinkle with salt and pepper
Top with one or two slices of tomato (depending on the size of your rectangles) and top that with slices of cashew cheese
Place the puff pastry rectangle on top of each tomato & cheese stack and press down the edges with the tip of a fork
Bake for 15-20 minutes or until puffed up and golden
Enjoy right away
